A super simple recipe but oh so luxurious. Luxurious because the price of real saffron is! It’s the reason why I always go into the grocery store on a budget and leave thinking ‘what did I even spend that on??’ No regrets! Some people have expensive chocolates- I have golden strands of delicate saffron.
Saffron Rice
-1 tbsp olive oil
-1/2 white onion, sliced
-1 pinch of real saffron
-1/2 cup water
-1 cup basmati rice, rinsed
-1 1/2 cup vegetable broth
1. Heat the oil in a pan, and sauté the onion on medium low heat until caramelized. Meanwhile soak the saffron in 1/2 cup boiling water.
2. Add the saffron water, and the rinsed rice, coating the rice fully in the infused water.
3. Add the broth. Put a lid on the pot. Bring to a boil and reduce to a simmer for 15-20 minutes until rice is tender and broth has been absorbed. Do not remove the pot lid during this process! This is crucial!
Serve warm with parsley as garnish
